Pesto Chicken Flatbread Recipe With Homemade Pesto Sauce

I am super excited to share this Flatbread Recipe.   I made 2 kinds of Flatbread Pizza with homemade Pesto Sauce. Both turned out better than expected! This Recipe can be modified to meet your taste expectations by simply adding more or less of the ingredients. 


You will need:

 food processor or blender. 

Four  7″ Greek Pita Flatbread Rounds ( or Flatbread of your choice)


 Ingredients for Fresh Pesto Sauce                                                


  • 4 oz  Fresh Basil Leaves ( You can substitute fresh spinach for half if desired)
  • 3-5  Cloves Fresh Garlic
  • 1/2 Cup Extra Virgin Olive Oil ( you can add a little more or less)
  • 1/2 Cup Fresh Grated Parmesan Cheese  (You can substitute half Romano Cheese if you prefer)
  • 1/3 Cup Pine Nuts
  • Salt & Pepper to taste ( Optional)


Chicken Pesto Avocado flatbread
  1.  Heat Pine nuts in a frying pan on medium heat for about 5 minutes. Make sure to stir often and not burn. This will make the pine nuts soft and easy to blend with the other ingredients.
  2.  Place Fresh Basil Leaves (without stems) in a Blender or Food Processor, add Cheese, Olive Oil, Garlic, and Pine Nuts.  Blend in short increments:  scraping the sides down often. Blend until smooth.


  • Fresh Grated Parmesan Cheese
  • Avocado
  • Grape Tomatoes
  • Cilantro
  • Chicken
  • Fresh Grated Parmesan Cheese
  • Cheddar blend (optional)


 Spread some Olive Oil on the pita before you spread the Pesto sauce. Top lightly with Parmesan Cheese then your choice of toppings.  I made two with Chicken only and two with Tomatoes, Avacado, Chicken and sprinkled the top with a Cheddar Blend. You can make this your own with whatever you would like to put on it.  This makes 4 mini flatbread pizzas and can serve up to 6 people depending on your choice of toppings.

Cook for 5-7 minutes until cheese is melted.
